"That looks like frogspawn" was my mum's reaction to my breakfast this morning.

And yes, there was some truth to that statement. But believe me, this 'frogspawn' tasted faaaaaar from what I imagine the real thing does. Don't let my mum put you off. I promise it's good.

If you're looking for a breakfast that can be prepped the night before, or even quickly in the morning and is ready by the time you've had a shower, this recipe is for you. A creamy, vanilla-birthday-cake tasting 'pudding' packed with plant-protein and omega-3's before you've even topped it with the fruit of your choice, it's a win-win situation for both your health and your tastebuds.



(serves 1)

4 tbsp chia seeds

1/2 scoop vanilla flavour vegan protein powder; I use this one (p.s. this part is completely optional - I just added it cos yo gal is trying to make some gainz and it also tastes v good - if you omit just use less liquid)

1 cup almond milk (can add more or some water if you like it less thick)

1 tsp vanilla essence 

fruit/toppings of your choice



Simply combine all ingredients in a bowl, mixing well to ensure there are no lumps left by the protein powder. Refrigerate overnight or for as long as you have time to in the morning, until the chia seeds have absorbed the liquid and made a pudding-like jelly consistency!

Top with whatever you fancy; this time I went for fresh mango and passion fruit, but frozen berries also work really well especially if left to defrost overnight! Feel free to add powders like Maca or Cacao (the latter will make a really yummy chocolate flavour pudding - who says you can't have desert for breakfast?!)
