EASY BRUNCH RECIPE: TOFU SCRAMBLE

Today I made myself and my (not so) little brother one of my favourite lunches (also breakfast/brunches/or even dinners); the famous Tofu Scramble. Such a quick, easy and delicious meal packed full of protein and nutrients - the block of tofu I used has 46.5g of protein so it's a perfect meal if you're looking to incorporate more protein-rich foods into your diet, without the saturated fats and cholesterol from animal products. 

 Here's how I make it:

INGREDIENTS:

1 packet of firm tofu

Few cloves of garlic

Half an onion

Veggies of your choice e.g. red bell pepper, mushroom

1/2 tsp each of tumeric, smoked paprika, cumin, salt, black pepper, chilli (optional)

1-2 cups of unsweetened plant milk

1/4 cup nutritional yeast (optional but gives a lil cheesy flavour)

1/4 cup chickpea/gram flour (can use plain)

ADDITIONAL OPTIONAL ITEMS: avocado, rocket, dairy-free butter, sriracha, ketchup

ADDITIONAL NOT-OPTIONAL ITEMS: toast. never opt-out of toast. 

Chop up a few cloves of garlic and half an onion if you have it (on this occasion I didn't) and throw in a frying pan with a little bit of water to sautée. Add (approx., I always eyeball this) 1/2 a teaspoon of tumeric, cumin, smoked paprika, chilli (if you like spice) and give it a stir. At this point, add any veggies you like - today I used around 3/4 of a red bell pepper and 1/2 a pack of mushrooms - tomatoes, spinach and spring onions also work really well - and continued to sautée. After a few minutes crumble a block of firm tofu (I used the brand Cauldron) into the pan, it should break apart easily between your fingers and look like a very scrambled-egg type consistency. Add around a cup to two cups of unsweetened plant milk of your choice (I used almond - shouldn't matter which as long as it's definitely unsweetened), 1/4 a cup of nutritional yeast and 1/4 a cup of gram (chickpea) flour (plain flour would also work!!) and continue to cook.

Keep on the heat until it reaches your desired consistency, and season well with salt and black pepper. I served mine on sourdough toast topped with smashed avocado and rocket, and my brothers on dairy-free buttered sourdough with a *small* sprinkle of rocket on top (gotta get those greens in.) Add sriracha or ketchup if you wish and enjooooyyy!!
